Kat's Slaw

Ingredients


  • 1 Fennel Bulb, Thinly Sliced

  • 2 Carrots, Thinly Sliced

  • 5 Spring Onions, Thinly Sliced

  • 1 Apple, Thinly Sliced

  • 20g Dill, Finely Chopped

  • 0,5 Cup Pumpkin Seeds

  • 3 Tbsp Extra Virgin Olive Oil

  • 1,5 Tbsp Apple Cider Vinegar

  • 1 Garlic Clove, Minced

  • 1 Pinch Salt & Pepper

Preparation

Step 1

In a medium-large bowl, add sliced fennel, carrots, spring onions, apple, chopped dill and pumpkin seeds.


Step 2

In a small bowl or glass, make the dressing by mixing olive oil, apple cider vinegar, minced garlic, salt and pepper.


Step 3

Pour the dressing over the sliced greens and mix well.



Tip:

Make this several hours before serving - it only gets better.

Can also be kept in an air tight container in the fridge for a few days and still taste and look beautiful when served.
