Beetroot Salad

Ingredients

  • 3 Beetroots, peeled and cut into rough pieces

  • 1 Apple, core removed

  • 150g Cauliflower

  • 1 Thumb Fresh Ginger

  • Juice and Zest of 1 Organic, Unwaxed Lime

  • 1 Tbsp Maple Syrup

  • 1/4 tsp Sea Salt

  • 1 Tbsp Extra Virgin Olive Oil


  • (Optional when serving: Pumpkin Seeds and/or Tahini)


Preparation

Step 1

Put all core ingredients in a blender and pulse or blend till you reach your desired texture. I prefer the pieces rather small.


Step 2 - Day 2 (Morning)

Serve with pumpkin seeds and/or tahini sprinkled on top.



Pro tip: Make double and store it in a sealed tubberware bowl in the fridge - it keeps fresh for days and kan be paired with most things!
