Ingredients
3 Beetroots, peeled and cut into rough pieces
1 Apple, core removed
150g Cauliflower
1 Thumb Fresh Ginger
Juice and Zest of 1 Organic, Unwaxed Lime
1 Tbsp Maple Syrup
1/4 tsp Sea Salt
1 Tbsp Extra Virgin Olive Oil
(Optional when serving: Pumpkin Seeds and/or Tahini)
Preparation
Step 1
Put all core ingredients in a blender and pulse or blend till you reach your desired texture. I prefer the pieces rather small.
Step 2 - Day 2 (Morning)
Serve with pumpkin seeds and/or tahini sprinkled on top.
Pro tip: Make double and store it in a sealed tubberware bowl in the fridge - it keeps fresh for days and kan be paired with most things!
